Grilled Corn Salad

Our Grilled Corn Salad is made with Ohio grilled corn on the cob combined with avocados, tomatoes, cucumbers, red onions, fresh basil, and an easy-to-make homemade dressing. Serve as a side dish for any meal or as a 'corn salsa' with tortilla chips.

Directions

Step 1

To prepare the dressing, whisk together olive oil, white vinegar, juice and zest of 1 lime, sugar, and Don Giovanni Gourmet Garlic Pepper Seasoning. Set aside.

Step 2

Mix together melted butter and Don Giovanni Gourmet Garlic Pepper Seasoning until fully combined, set aside.

Step 3

Cut corn on the cob at the bottom, about 1/2" above the last row of corn. Microwave for 3 minutes. Remove husk and silk from corn.

Step 4

Spread butter garlic pepper mixture over corn.

Step 5

Grill corn over medium-high heat, on the hot side of the grill, turning frequently for 5-10 minutes, until desired charred. Remove from heat.

Step 6

Use a sharp knife to remove cooked corn kernels off the cob. Hold cob vertically with narrow tip down on the cutting board, use a chef's knife to cut kernels off cob.

Step 7

Add corn kernels, chopped tomatoes, diced red onion, cubed avocados, chopped cucumbers, chopped basil, and dressing in serving bowl. Stir to combine.

Cook's Notes

Make Ahead: Add all ingredients, except avocado, to a bowl. Cover and refrigerate for up to 24 hours. Add diced avocado and stir right before serving.
