Preheat oven to 425°F.
Whisk almond milk and mustard together in a bowl.
In a separate bowl, add bread crumbs.
Sprinkle avocado wedges with 1/2 tsp of salt and 1/2 tsp of pepper. Roll in milk mixture. Roll in breadcrumbs to coat.
Spray rimmed baking pan with cooking spray. Place avocados on pan. Spray avocados with cooking spray.
Bake avocados for 20 minutes or until golden brown, turning once.
Serve with chopped cilantro and/or hot sauce, as desired.
