Preheat oven to 375°F. Lightly grease a casserole dish.
Cut broccoli and cauliflower floret stems away from base of stalks into bite size florets.
Bring a large pot of water to a boil. Add broccoli and cauliflower and cook for 2 minutes and drain.
Mix the cream of mushroom soup, mayonnaise, cheddar cheese, green onions, eggs, and ground pepper in a large bowl. Add the broccoli and cauliflower and mix to combine. Transfer mixture to the prepared casserole dish. Sprinkle with crushed buttery snack crackers.
Bake for 35 to 40 minutes, or until broccoli and cauliflower are tender and the filling is bubbling.
