Saucy Pork Chow Mein

This saucy chow mein recipe is tasty and easy to make using leftover pork roast. As delicious as take-out, this chow mein will be a family favorite with juicy pork, crunchy vegetables, and saucy noodles.

Directions

Step 1

Heat the oil in a large wok or skillet until hot. Add the sliced shallots, and fry until browned. Set aside on paper-towel-lined plate.

Step 2

Add carrots and red peppers to the wok and cook for 2 minutes.

Step 3

Add garlic and cook for 30 seconds.

Step 4

Add the bok choy stems and cook for 3 minutes.

Step 5

Add in the cooked pork and cooked noodles and cook for 3-4 minutes, tossing everything together using a set of tongs, until hot.

Step 6

Add the beansprouts, bok choy greens, and green onions and toss them together.

Step 7

Add Stir Fry Sauce to the wok. Toss everything together and cook for 2-3 minutes until the pork and noodles are hot throughout.

Step 8

Serve the pork chow mein topped with the fried shallots, hard-boiled egg halves, cilantro, red pepper flakes, and/or slices of lime.
