Cook the bacon using your preferred method until the bacon is crisp. Set aside to cool.
Prepare the Cleveland Quick pancake mix according to the package instructions.
Heat a griddle over medium heat. Place cooked bacon on griddle, ladle the pancake mix over bacon, completely covering. Cook the pancake until golden brown on one side, about 4 minutes. Flip and continue to cook until the pancake is fully set.
Serve the bacon pancakes with fresh fruit and maple syrup for dipping.
