Preheat oven to 350°F and line a baking sheet with parchment paper. Break apart cookie dough into 24 equal portions.
Roll each portion in crushed potato chips, rolling each into a ball, pressing to adhere the crushed chips.

Let cool 5 minutes before transferring cookies to a wire rack to cool completely.
