Crush 1 sleeve of snack crackers and place in a bowl. Add 2 Tbsp melted butter. Set aside.
Combine frozen potatoes with cream of chicken soup, cream cheese, cottage cheese, sour cream, garlic powder, and onion powder. Add cheddar cheese and combine. Pour into prepared casserole dish.
Preheat oven to 375ºF. Lightly spray a 9×13-inch baking dish with cooking spray.
Top with cracker mixture.
Bake uncovered for 50 to 60 minutes, until bubbly.
Top with parsley and/or green onions.
