Our cute and spooky Boo Brownies are quick and easy to make with a brownie mix, marshmallow, marshmallow cream, and frosting! They are spooktacular fun to make, so gather your little goblins to help with this fun Halloween recipe.

Step 1

Preheat oven to 325° F.

Step 2

Combine Food Club Brownie Mix with 2/3 cup vegetable oil, 1/4 cup water, and 2 eggs. Mix until moistened. Stir in 1/4 cup M&Ms or your favorite candy.

Step 3

Prepare 11x7 brownie pan by greasing bottom and sides of pan with butter. Line with parchment paper, leaving an overhang on 2 sides, butter parchment paper.

Step 4

Pour batter into prepared brownie pan. Bake 25 minutes or until toothpick inserted 2 inches from side of pan comes out almost clean. Remove from oven.

Step 5

Once brownies are removed from oven, place candy corn on top, pressing gently. Allow brownies to cool completely.

Step 6

Lift brownies using parchment 'handles' and place on cutting board. Cut into 8-16 pieces, as desired.

Step 7

Top each brownie with 1 large marshmallow.

Step 8

In small portions, melt marshmallow cream for 8-10 seconds, stir. Gently pour melted marshmallow cream over each marshmallow until covered. Refrigerate until set, about 10 minutes.

Step 9

Using Cookie Icing, draw 2 dots for eyes and an oval for the mouth on each marshmallow. Serve immediately or freeze until ready to serve (so the eyes and mouth don't run!).

Cook's Notes

Serve immediately after piping the eyes and mouth with cookie icing or place in freezer until ready to serve to prevent icing from sliding. Cookie Icing works better than frosting or gel.
