New Year's Black Eyed Peas

Black-Eyed Peas with bacon, garlic, and thyme combine in a savory soup that's said to bring luck and prosperity when eaten on New Year's Day!

Step 1

Place onion, celery, carrots, red bell peppers, cooked bacon, ham, garlic, thyme, oregano, pepper, black eyed peas, chicken broth, and bay leaves in a slow cooker. Stir.

Step 2

For Unsoaked Peas: Cook on high for about 4 -5 hours or low for about 6-7 hours. For Soaked Peas: Cook on high for about 3 1/2 - 4 1/2 hours or low for about 5 1/2 - 6 1/2 hours. Do not open the lid during the cooking time.

Step 3

Add spinach ½ hour before end and allow to wilt.

Step 4

Remove bay leaves before serving.

Step 5

Taste and stir in salt, as desired. Adjust seasonings if necessary.

Step 6

Garnish with chopped parsley.

Cook's Notes

This recipe can be used with soaked or unsoaked black eyed peas. If you prefer to soak, place peas in a bowl and cover with water for 8 hours or overnight. Customize this recipe to your preference. You can add cayenne pepper, Cajun or Creole seasoning for a spicier version. Replace the spinach with kale or collard greens.
