Piccadilly Carrot Souffle

Preheat oven to 350° F.
Boil carrots over medium-high heat for 15 minutes or until extra soft. Drain well and return to pot.
Mash carrots with a potato masher.
Add granulated sugar, baking powder, and vanilla, whip until smooth with a hand mixer.
Add flour and whip until incorporated.
Whisk eggs and add to mixture and blend well.
Add softened butter to the mixture and blend well.
Pour the mixture into a large baking dish like a 13 X 9-inch baking dish.
Bake for 1 hour or until the top is a light golden brown.
Sprinkle lightly with confectioners powdered sugar before serving, if desired.
