Boil corn for 5 minutes or grill corn for 3 minutes on each side, turning until all sides are browned/slightly charred.
Place cooked corn on a serving plate. Coat each ear of corn with the sour cream/mayo mixture with a knife or brush.
Sprinkle each ear of corn with the cheese/cilantro mixture.
Cut the lime in quarters and squeeze the juice onto the corn.
