Chili Lime Walleye with Mango Salsa

Enjoy Lake Erie Gold Walleye with an ancho chili fiesta rub and lime juice that is perfectly complemented by a fresh mango salsa. Serve over a bed of long-grain rice for a complete meal.

Directions

Step 1

Combine mango, red onion, apple, jalapeno, cilantro, juice from 1 lime, and salt in a bowl. Refrigerate until ready to use.

Step 2

Preheat the oven to 350°F.

Step 3

Combine all Ancho Chili Fiesta Rub, garlic salt, and pepper in a small bowl.

Step 4

Dry fish fillets and sprinkle with juice from 1 lime.

Step 5

Sprinkle chili rub seasoning onto the flesh of fish, and press in firmly.

Step 6

Heat peanut oil in cast-iron skillet over medium-high heat.

Step 7

Add walleye, seasoned side down to skillet, and sear for 3 minutes. Flip and sear skin-side down for another 3 minutes.

Step 8

Bake for 10 minutes or until a knife inserted at the thickest part barely flakes the meat apart.

Step 9

Serve with freshly prepared long-grain rice and mango salsa.
